2 1/4 teaspoons active dry yeast
1/4cupshortening
2 large eggs
1 1/2cups warm water
1cupevaporated milk
1/4cupconfectioners' sugar
7cupsall-purpose flour
1quartvegetable oil
1/2cupwhite sugar
1 teaspoon salt
Instructions
Dissolve yeast in warm water until completely dissolved in a large bowl. Add in the evaporated milk, eggs, sugar & salt; blend well.
Now, add in 4 cups of flour; mix well & beat for several minutes, until completely smooth. Add in the shortening & then the leftover 3 cups of the flour. Cover & let chill for up to a day.
Roll the dough out approximately ⅛” thick. Cut into 2 & ½” squares. Fry in hot oil (at 360 F). Once fried, place them on paper towels and drain.
Shake the confectioners’ sugar on hot beignets. Serve immediately & enjoy.
