Ingredients

  • 1 1/4 ground chicken
  • 1 clove garlic, minced
  • 1 cup panko bread crumbs
  • 1 large egg
  • 1 tablespoon taco seasoning
  • 1 teaspoon kosher salt
  • 1 teaspoon Tabasco sauce
  • 4 tablespoons olive oil, divided
  • 1 onion, sliced in thin slices
  • 1 red pepper, cut in thin strip
  • 1 green pepper, cut in thin strips
  • 1 lime, juiced
  • 1 ounce Tequila
  • 1 cup sour cream
  • 1 cup guacamole
  • 4 hamburger buns

Instructions

  1. Place ground chicken in a metal bowl.  Add garlic, bread crumbs, egg, seasoning and Tabasco, mix to combine.  Form 4 patties.  Set aside in refrigerator for 15 minutes.
  2.  In a medium-sized skillet over medium-high heat, add olive oil. When hot, add onion and both peppers.  Sauté until tender, about 10 minutes.  Place in metal bowl, cover and set aside to keep warm.
  3. Add olive oil to the skillet.  When hot, cook chicken burgers 5-6 minutes on each side.  Remove burgers to a plate.  Return vegetables, cook 1 minute then add the lime juice and tequila.
  4. Assemble burgers by placing a spoonful of guacamole on the bottom bun, add the chicken burger, and then add the sautéed vegetables.  Top with sour cream and the top half of the bun.
