Regardless of what dish you are stir-frying, here are some essential guidelines to guarantee success:

  • Prep ingredients in advance.  You’ll need them ready for this method of cooking.
  • Limit staring so meat and vegetables can develop flavor.
  • For even browning, use a non-stick skillet, not a wok.
  • Stir in batches.  Cooking too much at one time causes meat and vegetables to steam, not brown and caramelize. 
  • Add aromatics in the 60 seconds to preserve flavor and avoid scorching.
