I want the perfect hard boiled egg?  I want to eliminate the grey or green around the egg yolk.  I also want the yolk to perfectly soft and not over-cooked.

To make perfect hard boiled eggs, use eggs that are more than 7 days old.  Add them to a pot of water and add water so they are just barely covered completely.  Add ½ teaspoon baking soda which will help make the eggs easier to peel.  Use a lid to cover the pot.

Turn the eggs on high. Once they begin to boil, set timer for five minutes.  After five minutes, turn off the heat, leave the eggs in the pot for another five minutes.  After this second five minutes, immediately pour out the hot water and replace it with cold tap water.  This last step will stop the cooking process.
