Ingredients
- 3 pounds butternut squash, peeling and chopped in 1" cubes
- 3 tablespoons coconut oil, melted
- 2 teaspoons kosher salt
- 1 1/2 teaspoons cumin, ground
- 1 teaspoon coriander, ground
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
Instructions
- Preheat over to 350°F.
- Place the butternut squash in a medium metal bowl. Drizzle with coconut oil and toss to coat well.
- Sprinkle spices and continue tossing to coast evenly.
- Lay butternut squash flat on a baking sheet.
- Roast squash in the oven for 20-25 minutes.
- Serve warm.
